Ingredients
1-1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. allspice
2 eggs
1 tsp. vanilla
3/4 cup shortening
3/4 cup brown sugar
3/4 cup white sugar
1-1/2 cups whole oats
1-1/2 cups dried cranberries
1 cup semi-sweet chocolate (optional as a topping)
Directions
1. Preheat oven to 350.
2. In medium bowl, sift flour, baking soda, baking powder, salt, cinnamon and allspice.
3. In separate large bowl, cream together shortening, brown sugar and white sugar until fluffy. Add eggs and vanilla. Combine well.
4. Add flour mixture to wet ingredients and stir until combined. Fold in oats and cranberries.
5. Spoon/scoop onto cookie sheet in 1/4 cup lumps.
(roughly 6 per sheet)
6. Bake for 8-12 minutes, or until golden brown. Cool for a few minutes and move to cooling rack.
7. Optional - drizzle top of cookies with melted chocolate.
